After you beat the game (with any ending) in the tab at the bottom a button called "sneak peak" is selectable. Tap it to do Mel's short chapter set after the game.

If you complete a storyline (either via death or reaching the end of the story), you will unlock a couple options that will allow you to check out alternate story choices.

Unlockable	How to unlock
Fast Mode	Reach the end of a storyline.
Story Rewind	Reach the end of a storyline.
