All you have to do is press both red buttons on the control handles at the following modes:

Fortress Mode- It Will Take One Jackpot Away.
Museum Mode- It Will Take Away One Jackpot From Hardest Down. Ex. Side Ramp, Then Right Loop.
Wasteland Mode- It Will Take One Jackpot Away.
In Acmag Mode -It Will Take Away The Last Traget The Cow.
In Capture Simon Mode-If It Goes Down The Side Allys (At The Ends Of The Playfield) And You Press The Tow Red Buttons It Will Automaticly Capture Him.
