You need to stick to the track as much as possible - it's tempting to fly around, but you'll lose speed much faster in the air.

Switch gravity just after a bump in the road to avoid flying off the track and hurting your speed.

You can gently lower yourself back onto the track after a huge jump - just tap the screen a couple of times as you come down to level yourself out a little.
