In addition to the costumes you earn just by playing the game, there are quite a number of costumes unlocked by scanning the correct amiibo figures. On the map screen, tap the amiibo icon in the lower left-hand corner and scan the correct amiibo to unlock the costume permanently in the "amiibo Hut". (NOTE: To unlock any of the Yoshi costumes, you must scan the corresponding Yoshi amiibo within the level to activate Double Yoshi Mode. When the level is completed, that Yoshi will be selectable in the amiibo Hut.)
