Enter the following codes on the Transmission Selection screen.

Left, Left, Right, Right, Left, Right, Z, Y, Z	Tantalus bike
Left, Left, Right, Right, Z, Y	Super Bike (Manual Tran)
Up, Up, Down, Down, Left, Right, Z, Y	Manx TT Bike
Up, Up, Down, Down, Left, Right, Z, Y	Sheep Mode
Up, Up, Down, Down, Right, Left, Z, Y	Super Bike (Automatic Tran)
X + Y + Z + L + R	Super Bike (3rd Type)
Y, then allow timer to run out	Grey Bike

Pause the game then press X, Y and Z altogether.

Select Arcade mode, and at the Course Select screen, press X+Y+Z. Now, select your course and at the Transmission Select screen, press up or down to select the music track.

Finish 1st place in all four races of Saturn Challenge Mode to unlock the three Super Bikes.
