When you make a touchdown hold L1 and press one of the following buttons to do a touchdown celebration:

Circle - Jumping spike
Triangle - Prayer
X - Spike
R2 - Slam Dunk
R1 - Shoulder thrust
Square - Hand celebration

Go to Settings / Secret Codes and type GOLDENGOD to unlock over 200 teams.
